Pumpkin season is upon us, and what better way to celebrate than with a healthy muffin? Even better, these are 2 Weight Watcher Smart Points each, making them one of my favorite go-to recipes.
These muffins aren’t sweet and do have a dense texture, so they definitely aren’t your average muffin. However, the savings in calories and points are well worth it. Added bonus- my second grade son will eat them.

Ingredients:
1 egg
1 egg white (I use liquid egg whites)
2 Tbsp brown sugar
1/3 cup 0% vanilla yogurt (I use Light & Fit brand)
3/4 cup canned pumpkin
1 medium mashed banana
1 tsp vanilla
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp pumpkin pie spice (more or less to taste- I usually add a dash more)
Directions:
Preheat oven to 350F, spray a regular sized muffin tin with nonstick spray.
In a bowl using an electric mixer or wire whisk, beat together egg, egg white, and brown sugar for 2 minutes.
Add yogurt, pumpkin, mashed banana, and vanilla. Mix well.
Stir in flour, baking soda, baking powder, and pumpkin pie spice.
Fill 10 muffin cups and bake for 25 minutes.
Store in refrigerator.
